Lavender is making a huge comeback in the kitchen. Although years ago it was used in all types of cooking, only now are our modern Michelin starred chefs using it regularly to add flavour and colour to gourmet dishes. One can easily do this at home, either through experimentation or by following one of the many lavender recipes online. The trick is to use it sparingly, in savoury cooking when starting out try swapping half rosemary for lavender in stews, with roast meat and in soups. In sweet cooking it pairs well with homemade ice cream, biscuits and custards.
